Porkies was created by John and Byron after falling in love with BBQ. Two Perth chefs both living with North American roots and passionate about all things BBQ!

John has travelled over 42,000kms driving around the United States eating BBQ every chance he could. He attended Paul Kirk’s “Pitmaster College” to now have a Bachelor of Barbeque Science B.S.

In 2014 at the World Championships in Kansas, John became a qualified KCBS (Kansas City BBQ Society) judge.

The Porkies world class smoker “our hickory” comes from Cape Girardeau Missouri and was made right on the banks of the Mississppi River. All meats are locally sourced and smoked with Australian hard woods. With endless testing, 3 signature sauces have been designed in-house to compliment Porkies’ barbeque loving rubs.

Who is Paul Kirk?
Paul Kirk, aka The Kansas City Baron of Barbeque and The Ambassador of Barbeque, is renowned as the world’s most accomplished barbeque chef & pitmaster.

Chef Paul is the recipient of 425 cooking awards, including champion of the American Royal Open (the largest barbeque competition in the world) and seven World Barbeque Championships. Chef Paul was inducted into the Barbeque Hall of Fame in 1990, and has been named numerous times to the Julia Child BBQ Team of Ten.
